Fish cakes and cookies with muesli

I haven’t written in ages and it’s all because of horrible viruses that broke into our appartament and decided to stay for a while. It all started so unromantically on Valentine’s when I came back home late after work and went into bed. I woke up shivering with high fever. That was the beginning of a flu. Luckily, viruses didn’t do as much damage in Misi and girls. Misi and Anabel had a fever for a couple of days and all Rosie had (and still has) is a cold.

Na szczescie wirusy nie zrobily takiego spustoszenia u dziewczynek i Misiego. Anabel i Misi troszke goraczkowali ale dosc szybko wszystko przeszlo a Rosie meczyl (i nadal meczy) jedynie katarek.

Luckily all illness is behind us so we celebrated (a bit irresponsibly 😉 )with strawberry cheesecake ice-cream. While still ill we found very cheap flights to Poland and so we decided to go on holidays. A fact that we will spend Easter in Poland gave me so much energy which I use in baking and cooking. Lately I have tried a recipe for fish cakes old style. They came out delicious!!! They are definitely going on our Friday meals list 🙂

Na szczescie chorobska juz za nami, co swietowalismy dosc nieodpowiedzialnie 😉 lodami o smaku sernika. A jeszcze w trakcie chorowania natrafilismy na bardzo tanie bilety do Polski i tak zapadla decyzja o urlopie. Fakt, ze swieta wielkanocne spedzimy w Polsce napawa mnie radoscia i energia, ktorym daje upust w gotowaniu i pieczeniu. Ostatnio wyprobowalam irlandzki przepis na tradycyjne fish cakes (kulki rybne?- trudno znalezc na to polski odpowiednik ). Wyszly pyszne!!! Stanowczo trafia na liste dan piatkowych.

And there’s a recipe(if you get tempted):

A oto przepis(jesli ktos chce sie skusic):

  450g white fish filleted                                      450 g filetow bialej ryby(ja uzylam dorsza)

  45og mashed potatoes                                      450g puree ziemniaczanego

1 lemon                                                                       1 cytryna

1 finely diced onion                                               1 srednia cebula, drobno pokrojona

15g butter                                                                  15g masla

1 tsp fresh parsley                                                  1 lyzcz swiezej natki pietruszki

salt, pepper                                                               sol, pieprz

1 egg                                                                             1 jajko

300ml milk                                                               300ml mleka

115g breadcrumbs                                                 115g swiezej bulki tartej (uzyskujemy przez siekanie                                                                                                                                                       w blenderze kilku kromek chleba bez skorki)

oil                                                                                      olej

Pre-heat oven to 180°C. Add butter, onion, pepper and salt to mashed potatoes. Poach fish very gently for 5 min. When cooled, remove fish immediately from the water, otherwise it will absorb the liquid. When cold, mix the fish into the potato. Mould the mixture into equal sized cakes (I got 7). Dip cakes in flour then in a wash, made with egg and milk. Finish with coating with fresh breadcrumbs, allow to stand for 30min. Heat oil in a frying pan, seal fish cakes on both sides until nicely browned and finish off in the oven for 20min. Serve with side salad and tartar sauce.

Nagrzewamy piekarnik do 180°C. Do puree dodajemy maslo, cebule, sol i pieprz. Delikatnie gotujemy rybe przez ok 5min. Gdy ugotowana natychmiast wyjmujemy z wody( inaczej zacznie nebierac wody). Po schlodzeniu, dodajemy rybe do ziemniakow i mieszamy. Formujemy dosc spore kulki (mi wyszlo 7), maczamy w mace, nastepnie w jajku z mlekiem a na koniec w bulce tartej. Odstawiamy na 30min. Olej podgrzewamy na patelni i  podsmazamy na zlocisty kolor. Nastepnie wrzucamy do piekarnika na 20 min. Serwujemy z salatka i sosem tartar.

And for dessert I baked these cookies with muesli with a recipe found on Iza’s blog and they came out suuuper. Even my fussy eater- Anabel ate some. Besides for weeks I had a whole package of muesli which, as it turned out, nobody likes in our home and I didn’t know what to do with it. Let me tell you, it tastes sooo much better as cookies 😉

A na deser upieklam ciasteczka z musli z przepisu Izy z domowego zakatka i wyszly suuuper. Nawet niejadek Anabel sie skusila. Poza tym od tygodni mialam cale opakowanie musli, ktorego jak sie okazalo nikt u nas nie lubi i nie wiedzialam co z nim zrobic. Okazalo sie, ze w postaci ciasteczek smakuje duuuuzo lepiej 😉

Inspired also by Iza I made rainbow jelly. It doesn’t look as amazing but tastes quite well 😀
