Fruit cake

Thanks to my mom I discovered religia.tv (polish catholic tv channel), where sister Aniela has her culinary program. I decided to try her fruit cake just because it looked so easy, but because of that I didn’t expect much of it. I was so surprised when it turned out soooo delicious. Misi made a cheesecake same day but I berely touched it while I couldn’t take my hands of  fruit cake. It’s called fruit cake because you can put any kind of fruit in it though I made it twice and both times with blueberries. One of the biggest advantages of the cake is the fact that even my fussy Anabel loves it and this is the only way to make her eat some berries.

Dzieki mojej mamie, odkrylam ostatnio religia.tv, gdzie swoj kulinarny program prowadzi siostra Aniela.  Bardziej z nudow niz entuzjazmu postanowilam wyprobowac jej ciasto owocowe poniewaz wygladalo na tak proste, ale z tych samych powodow nie mialam wobec niego wielkich oczekiwan. Rezultat bardzo mnie zaskoczyl bo okazalo sie pyyyyyyyyyszne 🙂 . Misi upiekl tego samego dnia sernik ale ledwo go dotknelam natomiast od ciasta siostry Anieli nie moglam sie oderwac. Nazywa sie szybkim ciastem z owocami poniewaz mozna wrzucic do niego jakie tylko sie ma owoce pod reka ale ja pieklam je dwukrotnie i dwukrotnie z borowkami. Wielka zaleta tego ciasta jest to, ze nawet moj niejadek Anabel je uwielbia wiec choc w takiej postaci udaje mi sie przemycic troszke borowek do jej organizmu 😉

Because the recipe on original website is in polish, here’s an english version:

1 cup of sugar

1cup of buttercream or natural yoghurt

½ cup of oil

2½ cup of flour

3tsp baking powder

3 eggs

300g fruit (fresh or frozen)

200g of fat for cake tin

200g of dry breadcrumbs

In a  bowl whisk together eggs and the sugar. Add the rest of inhgredients and whisk until the cake will have a consistence of thick sour cream. Add some of fruit and lightly mix. Pour into cake tin (greased and sprinkled with breadcrumbs) and put on top the rest of fruit. Bake in 180°C for about an hour.
